This is easy to make and great to serve as dessert or to eat as a tasty snack at any time of the day!

  1. First cut the chocolate up into small pieces and melt in a glass bowl over a pan of simmering water. Once it has completely melted, leave it to cool.

  2. Cut the butter up into small pieces and add the sugar. Beat until soft and creamy.

  3. If using rum, add it to the creamed butter and sugar a little at a time, mix well.

  4. Add the eggs, one at a time, and whisk continuously until pale and fluffy.

  5. Now add the melted chocolate (that should be at room temperature).

  6. Once the chocolate is completely amalgamated, add the crushed plain cookies. Mix until the cookies are fully incorporated into the chocolate mixture.

  7. Put the mixture onto a sheet of waxed paper and using a spatula, form a long sausage shape, then take one long edge of the waxed paper and roll it over the mixture until it is completely wrapped up! Twist and fold the paper at the ends so that the salami is sealed.

  8. Then put it on a plate or tray and leave it in the fridge overnight.

  9. Once it has hardened, you can tie it with string to make it look like a real salami, and dust it with powdered sugar. Cut into thick slices and serve.
